Pre-fermented cauliflower rice

Although I'm using ferment, in fact I'm pre-fermenting the vegetable before cooking it. Cooking will, by and large, destroy the microbes. However, the fermenting still helps to break down anti-nutrients and toxins so that it is better digested. Also, when the microbes in the ferment enjoy the vegetable they produce nutrients such as vitamins and anti-oxidants. All this means that the food tastes better and is better for you! This also means that you can use this recipe in Phase I D2D.

Ingredients

  • 1 whole cauliflower
  • 1/2 tsp Shiokoji
  • 1/2 tsp of mixed herbs or spices

Method

  1. Grate cauliflower and add the Shiokoji
  2. Leave to ferment for 4-12 hours
  3. Add the herbs and/or spices 
  4. Steam until soft
  5. Enjoy!
