Besma's garlic soup

My friend Besma made this soup for me when I was ill. It is truly powerful stuff. It's a good one to have when you feel you're coming down with something.
If you suffer with heartburn best give this one a miss.
Ingredients
- 9 Garlic Bulbs
- 20g Coconut Oil
- 1 Litre of boiling water or home-made meat/fish or chicken or vegetable stock
- 1 tsp of salt
- 1 tsp Herb de Provence
- 100 mls coconut milk or cream
Method
- Peel all the Garlic Bulbs keeping the garlic cloves whole; t
- Then 'sweat' them on a low temperature (do not allow the garlic to burn) for 20 mins until cooked (they become slightly translucent when cooked)
- Add 1 litre of boiling water or homemade stock of your choice then add 1 tsp of salt and simmer on a low heat for a minimum of 20 mins.
- Add 1 tsp of Herbs de Provence and cook for a further 30 mins.
- Remove from heat and blend in food processor or with a stick blender until smooth and creamy.
- Return to heat and add water/coconut milk/cream to give desired consistency
