Pre-fermented Fried Aubergines

Although I'm using ferment, in fact I'm pre-fermenting the vegetable before cooking it. Cooking will, by and large, destroy the microbes. However, the fermenting still helps to break down anti-nutrients and toxins so that it is better digested. Also, when the microbes in the ferment enjoy the vegetable they produce nutrients such as vitamins and anti-oxidants. All this means that the food tastes better and is better for you! This also means that you can use this recipe in Phase I D2D.
Ingredients
- 1 Aubergine
- 5mls of Shiokoji
Method
- Chop the aubergine into pieces and coat with the Shiokoji
- Leave to ferment for 4-12 hours
- Fry in coconut oil
- Enjoy!
