Leek and Jam Fermented Salad

In Phase II D2D remember to add foods gradually. Adding lots of fermented foods all at once can be lead to a Herxheimer ('die-off') reaction. This is where the microbes in the ferment compete with the microbes in the gut (usually the upper intestine) and cause the microbes in the gut to die, leaving inflammation, bloating and pain. By adding one new food per week, this is less likely to happen.
Ingredients
- 1 Leek
- 1 dessert spoon of marmalade
- 1/2 bell pepper
- 1/2 onion
- Fish sauce - a shake
- Red chilli pepper - 1/2 tsp
- Salt and pepper
- Ferment - Kombucha or apple cider vinegar - 15 mls or Shiokoji - 10 mls
Method
- Finely shred the leak, bell pepper and onion.
- Combine the vegetables with the ferment and the rest of the seasoning and mix well.
- Cover and leave to ferment for 4-12 hours.
