Kimchi

Kimchi helps with detoxification of heavy metals, weight loss, blood sugar control, depression, atherosclerosis, reduced blood fat levels, zinc and iron absorption, and digestion of cereals and legumes.
In Phase II D2D remember to add foods gradually. Adding lots of fermented foods all at once can be lead to a Herxheimer ('die-off') reaction. This is where the microbes in the ferment compete with the microbes in the gut (usually the upper intestine) and cause the microbes in the gut to die, leaving inflammation, bloating and pain. By adding one new food per week, this is less likely to happen.
Ingredients
- Chinese cabbage - 1
- Salt - 30mls
- Spring onions - 3
- Garlic - 1 clove
- Ginger - 1 slice
- Water - 50-100mls
- Chilli pepper (optional) - 1
Method
Chop cabbage into bite size chunks and rub salt into the cabbage, and leave for 4 hours.
Wash salt from cabbage with running water.
Blend spring onions, garlic, ginger and chilli (optional) with water.
Add to cabbage - and rub in (use rubber gloves). Cover lightly. Leave for 2 days.
