Kanten (Japanese agar agar ) Noodles

These Japanese noodles taste like rice noodles. Unlike rice noodles, they are pure seaweed. The Japanese take great care to produce Kanten and it is therefore more expensive than the Chinese agar agar equivalent. The beauty of Kanten noodles is that you have a nutritious food that is good for your gut and will expand when it gets down there so that you feel fuller. They are quite bland if served alone so do spice them up with a sauce and seasonings.
Ingredients
- Dried Japanese Kanten Noodles
- Hot water
Method
- Rehydrate the noodles by soaking them in hot water for 15-25 minutes, depending on the desired level of softness. Don't forget about them! They dissolve completely if left.
- Once at the desired texture, drain off the water and add your sauce.
- Enjoy!
