Cauliflower and seaweed soup

This is a great winter soup and wonderful for Phase I D2D also. For the other Phases you can jazz up the umami by adding sake lees.

You can pre-ferment the cauliflower before cooking by mixing in some Shiokoji.

If you don't like seaweed switch it out for another veg - but seaweed is so great as a nutrient dense food and you could always add less so as not to get the seaweed taste.

 

Ingredients

  • 1 cauliflower
  • 1 dessert spoon of dried seaweed - I often use Wakame
  • Salt & Pepper to taste
  • Mix herbs (fresh if Phase I)
  • 1/2 can organic coconut milk (optional)
  • 1 clove garlic (optional)
  • Coconut oil to fry the garlic
  • Hot water to cover the cauliflower

Method

  1. Crush the garlic and fry in the coconut oil until becoming see-through
  2. Add all the other ingredients
  3. Simmer on a low heat for 1-2 hours
  4. Blend in a food mixer until smooth
  5. Enjoy!
