Cauliflower and seaweed soup

This is a great winter soup and wonderful for Phase I D2D also. For the other Phases you can jazz up the umami by adding sake lees.
You can pre-ferment the cauliflower before cooking by mixing in some Shiokoji.
If you don't like seaweed switch it out for another veg - but seaweed is so great as a nutrient dense food and you could always add less so as not to get the seaweed taste.
Ingredients
- 1 cauliflower
- 1 dessert spoon of dried seaweed - I often use Wakame
- Salt & Pepper to taste
- Mix herbs (fresh if Phase I)
- 1/2 can organic coconut milk (optional)
- 1 clove garlic (optional)
- Coconut oil to fry the garlic
- Hot water to cover the cauliflower
Method
- Crush the garlic and fry in the coconut oil until becoming see-through
- Add all the other ingredients
- Simmer on a low heat for 1-2 hours
- Blend in a food mixer until smooth
- Enjoy!
