Pink vegetable soup

What to do with the fermented red cabbage that is too tart and old looking to eat raw? Turn it into a soup. The Polish do this all the time with their Kraut soups.

This soup should be good for Phase I and up as we are heating it after fermentation so there should be no microbes in the finished soup.

Ingredients

  • Fermented chopped red cabbage 1 bowl
  • 1/2 white cabbage chopped
  • 4-8 white mushrooms
  • 1-2 cloves of garlic
  • Organic coconut milk - 120 mls
  • Water - about 500 mls
  • 1/2 tsp bicarbonate of soda
  • Salt & Pepper (not Phase I) & herbs (fresh for Phase I) to taste

Method

  1. Put all ingredients (except the coconut milk) in a pot and bring to a gentle boil until all ingredients are soft
  2. Blend the mixture in a food blender and put back into pot and bring to a simmer
  3. Stir in coconut milk and simmer for 10 minutes or until well mixed
  4. Enjoy!
