Aubergine and pea pan bake

Aubergine is much under-used. Try this very simple yet delicious combo.
Ingredients
- 1 aubergine
- 1 tsp Shiokoji
- 1 tsp mixed herbs
- Pinch of salt and pepper
- 1/2 cup of frozen peas
- 1-1/2 clove of garlic
- Good oil for frying
Method
- Chop the aubergine into cubes and marinade for 4-12 hrs in the Shiokoji
- Crush the garlic and fry on a low heat with all of the rest of the ingredients until the oil is well soaked into the aubergines
- Add the frozen peas and stir until they warmed through
- Enjoy!
