Aubergine and pea pan bake

Aubergine is much under-used. Try this very simple yet delicious combo.

Ingredients

  • 1 aubergine
  • 1 tsp Shiokoji
  • 1 tsp mixed herbs
  • Pinch of salt and pepper
  • 1/2 cup of frozen peas
  • 1-1/2 clove of garlic
  • Good oil for frying

Method

  1. Chop the aubergine into cubes and marinade for 4-12 hrs in the Shiokoji
  2. Crush the garlic and fry on a low heat with all of the rest of the ingredients until the oil is well soaked into the aubergines
  3. Add the frozen peas and stir until they warmed through
  4. Enjoy!
