Fermented cucumber, onion and red pepper pickle

Enjoy this ferment as a delicious side dish. Leave out some of the spices or add more of your own!
If you're not going to eat all of this at once, move to the fridge once you have made it so that it doesn't become too tart.
You can keep enjoying this dish for many days/weeks, even when it is tart. It will simply keep on fermenting like vinegar.
Ingredients
- 1 cucumber
- 1 bell pepper
- 1/2 small onion
- 1 tsp Shiokoji
- 1 tsp brown sugar
- 1/2 tsp fish sauce
- 1/2 tsp mixed herbs
- 1/4 hot chilli pepper (or fermented scotch bonnet infusion)
Method
Chop or slice the vegetables and mix in all of the other ingredients.
Leave this mixture to ferment for 4-12 hours.
