Swede, fennel and sweet potato bake

These delicious root vegetables are scrumptious comfort food. Enjoy!
Ingredients
- 1 fennel
- 1 swede
- 1 sweet potato
- 1 tsp Shiokoji
- 1 clove garlic - chopped
- 20-30 mls olive oil
- 2-3 tsp of mixed herbs
- 1-2 tsp of salt and pepper
Method
- Peel the swede and the sweet potato and chop into cubes. Slice the fennel into strips.
- Add the Shiokoji and ferment for 4-12 hours.
- Place the vegetables and all of the rest of the ingredients into a roasting pan and roast on low to moderate heat until the vegetables are soft.
