Swede, fennel and sweet potato bake

These delicious root vegetables are scrumptious comfort food. Enjoy!

Ingredients

  • 1 fennel
  • 1 swede
  • 1 sweet potato
  • 1 tsp Shiokoji
  • 1 clove garlic - chopped
  • 20-30 mls olive oil
  • 2-3 tsp of mixed herbs
  • 1-2 tsp of salt and pepper

Method

  1. Peel the swede and the sweet potato and chop into cubes. Slice the fennel into strips.
  2. Add the Shiokoji and ferment for 4-12 hours.
  3. Place the vegetables and all of the rest of the ingredients into a roasting pan and roast on low to moderate heat until the vegetables are soft.
  4. Enjoy!
