Salmon and Coconut stew

This delicious dish is so simple to make. Change the Fenugreek leaves for coriander leaves or mixed herbs. For a Phase I D2D meal you may need to heat the dish to a boil and then lower the heat so as not to have any microbes in the final dish. Alternatively for a Phase I meal you could leave out the Shiokoji
Ingredients
- Salmon fillets
- 10 mls Shiokoji
- 1 can of coconut milk/cream
- 1-2 tsp of fenugreek leaves or other green herb
Method
- Spread the Shiokoji on the fish and leave to ferment for 4-12 hours
- Add fish, coconut milk/cream to other ingredients
- Heat gently until just simmering for 10-15 minutes
- Enjoy!
