Courgette, broccoli and garlic trio

Broccoli although packed with good stuff can be difficult to digest. It's therefore important to help pre-digest it by fermenting it with Shiokoji. For Phase I you should also make sure that the finished vegetable is soft and not crunchy. 

Ingredients

  • Handful of chopped broccoli
  • Handful of chopped courgette
  • 10 mls of Shiokoji
  • 1 clove of crushed garlic
  • Cracked black pepper
  • Pinch of salt
  • Coconut oil for frying

Method

  1. Combine the broccoli and courgette with the Shiokoji and leave to ferment for 4-12 hours
  2. Fry the crushed garlic gently until soft.
  3. Add the rest of the ingredients, cover and leave to cook on a low to medium heat until the broccoli is soft.
  4. Enjoy!
