Courgette, broccoli and garlic trio

Broccoli although packed with good stuff can be difficult to digest. It's therefore important to help pre-digest it by fermenting it with Shiokoji. For Phase I you should also make sure that the finished vegetable is soft and not crunchy.
Ingredients
- Handful of chopped broccoli
- Handful of chopped courgette
- 10 mls of Shiokoji
- 1 clove of crushed garlic
- Cracked black pepper
- Pinch of salt
- Coconut oil for frying
Method
- Combine the broccoli and courgette with the Shiokoji and leave to ferment for 4-12 hours
- Fry the crushed garlic gently until soft.
- Add the rest of the ingredients, cover and leave to cook on a low to medium heat until the broccoli is soft.
