Roasted honey and raisin fermented carrots

Jazz up the simple carrot and turn into this luxurious dish with not too much effort!

Ingredients

  • Handful of carrots - chopped
  • 2 dessert spoons of raisins
  • 10 mls of Shiokoji
  • 1 tsp of honey
  • 1 tsp mixed herbs
  • Organic coconut oil for roasting

Method

  1. Place the chopped carrots, raisins, honey and Shiokoji in a bowl and mix thoroughly.
  2. Leave to ferment for 8-12 hours.
  3. Add the herbs and roast in a moderately hot oven until the carrots are soft.
  4. Enjoy!
