Roasted honey and raisin fermented carrots

Jazz up the simple carrot and turn into this luxurious dish with not too much effort!
Ingredients
- Handful of carrots - chopped
- 2 dessert spoons of raisins
- 10 mls of Shiokoji
- 1 tsp of honey
- 1 tsp mixed herbs
- Organic coconut oil for roasting
Method
- Place the chopped carrots, raisins, honey and Shiokoji in a bowl and mix thoroughly.
- Leave to ferment for 8-12 hours.
- Add the herbs and roast in a moderately hot oven until the carrots are soft.
- Enjoy!
