Roasted parsnips, carrots and sweet potatoes

Blackstrap molasses or black treacle if you're in the UK is 'good' sugar. It acts as a prebiotic, it protects food during heating and keeps the blood insulin down - yes really - even though it is a sugar. Don't be afraid to add this wonderful ingredient into your foods and ferments.

Ingredients

  • 4-6 of chopped parsnips
  • 2-3 chopped carrots
  • 1 chopped medium sized sweet potato
  • Garlic infusion - 20 mls
  • 2 tsp mixed herbs
  • 1 dessert spoon of blackstrap molasses or black treacle
  • Salt and pepper

Method

  1. Combine all the ingredients and mix well
  2. Place in a roasting dish and roast on a low to moderate oven until sweet potatoes are soft (30-40 minutes)
  3. Enjoy!
