Marmalade Chicken

Marmalade chicken takes a hint from Duck á l'orange and then zooms it up a notch. This chicken is so delicious that you might find yourself eating the whole lot. You'll need my Fermented Marmalade recipe. Although if you haven't made some yet (please do - it's scrumptious), use regular marmalade ?.
Ingredients
- Shiokoji - 1/2 tsp per chicken thigh
- Chicken pieces
- Fermented marmalade (1 dessert spoon per chicken thigh)
- Garlic oil infusion to drizzle
Method
- Combine the Shiokoji with the fermented marmalade
- Leave to marinade for 12-24 hours
- Place in a baking tray and drizzle with garlic oil infusion.
- Cook at a moderate heat (160 C/320 F) until golden.
