SCOBY cake

What to do with left over SCOBY? Make cake!! So, the SCOBY contains some great bioactive prebiotic substances that are great for the gut. Most of microbes might be lost during baking, but not all of them are. It's is my experience that fermented cakes and mousses keep on fermenting after they are baked. Try it and see. They don't tend to 'go off' like normal cakes. They just get better for you! At least for a few days any way.
Ingredients
- 300 gm self-raising flour
- 100 gm coconut oil
- 100 gm of SCOBY-orange mix
- 4 eggs
- 100 gm of sugarcane sugar
Method
- Put all the ingredients into a bowl and blend until smooth.
- Cover and leave to ferment for 4-12 hours.
- Pour mixture into a greased or lined cake tin.
- Bake on a medium heat (150 C/320 F) for around 30 minutes or until the sides of the cake come away from the sides of the tin.
- Turn onto a wired cake rack and leave to cool.
- Decorate as desired.
- Enjoy!
