SCOBY juice

What to do with left-over SCOBY? Why not make cordial, or mix it with fruit pulp and rind left over from making marmalade. When you add fresh Kombucha to this mix, you'll get more fermented bioactive goodness! The amazing thing about this SCOBY juice blend is that you can keep refilling it with sweet kombucha and you'll keep getting new fresh juice for a many repeats. The bioactive substances are likely to change as you the fruit pulp and rind ages but variety is king when it comes to the gut. Give it a go!
Ingredients
- Left-over SCOBY (size doesn't matter)
- Left-over fruit pulp and rind (non-waxed)
- Sweet Kombucha
Method
- Blend the SCOBY and the fruit pulp in a food blender
- Add sweet Kombucha to fill the ferment container and leave to ferment for around 3-5 days
- Strain the juice to drink as cordial or use juice plus pulp to make SCOBY cake.
- Enjoy!
